Ginger ( Zingiber Officinale) is a rhizome (root) and grows underground as a thick, tuberous stem bearing both roots and shoots. It belongs to the same family of turmeric and cardamom. It is highly value in international markets for its aroma, pungency and Aleo resin content.

Ginger is   dried and powered and use as a spice in cooking and baking. Studies has shown that dried ginger contains a higher concentration of two active compounds Shogaol and Gingerol about three times more than in fresh ginger. Gingers are dried to preserve them for transport and storage.

Availability:

Nigeria is the third largest exporter of ginger in the world after China and India. Most of the dried gingers  that are available for international market are sun-dried to between 10 – 12% moisture content to increase  their shelf life.

Gingers are usually split or sliced before drying.
